Il Capanno restaurant boasts a vegetable garden, allowing it to serve traditional, locally sourced Umbrian cuisine, perfectly in keeping with the restaurant's philosophy: homemade cured meats, pigeons from select farms, meat from trusted butchers, cheeses from Fattoria Calcabrina, local game, and home-grown vegetables.


The restaurant's cuisine showcases simple, yet flavorful, regional dishes, including artichoke with ricotta, fettuccine with white pigeon ragù, chicken livers in a net, gramigna and savory ravioli with white chicken ragù cacciatore, roast pigeon, breaded lamb ribs baked in the oven with herbs, delicious vegetables, and much more, including a gluten-free version, with a special focus on white truffle.
